INTRODUCTION
SUBJECT: INTRODUCTION
Type: Review of the history of commercial restoration, addressing its past, present and future, as well as the gastronomic currents and current trends in the restoration market.
MODULE 2. MANAGEMENT OF OPERATIONS IN THE ROOM
SUBJECT: MANAGEMENT OF OPERATIONS IN THE ROOM
Type: The correct organization and establishment of processes in the room allows to systematize and optimize the performance of the department, guaranteeing the optimization of the team’s time while achieving robustness and consistency in the daily activity of the department. The student will know and apply tools that will help him/her to take data, analyze and take corrective measures that allow him/her to improve the processes and workflows; the procedure manuals in the room, control checklists and efficient operational management, including schedule management. The definition of facilities, the provision of services in restoration, reservations and customer CRM, as well as opening and closing processes will also be addressed. We also include the management of billing and cash. In addition, the use of artificial intelligence will be integrated to improve operational planning, workflow analysis and customer relationship management.
MODULE 4. MARKETING AND TECHNOLOGY IN THE ROOM
SUBJECT: MARKETING IN THE ROOM
Type: Marketing and technology are essential in a restaurant, as they help to attract and increase customer traffic, improve efficiency and increase profitability. Marketing attracts and retains customers, while technology optimizes service and business management. The student will learn to analyze the management of online reputation as a competitive advantage in the room, the customer journey map and marketing at the point of sale, together with the figure of the Host as a sales engine. Topics such as banquet and catering management, menu design and the marketing calendar, as well as technological trends and the application of Artificial Intelligence in room operations will also be studied.
MODULE 1. ECONOMIC MANAGEMENT IN THE ROOM
SUBJECT: ECONOMIC MANAGEMENT IN THE ROOM
Type: The economic management of a restaurant is a strategic task that directly influences the profitability of the department, the quality of the gastronomic offer and the viability of the business. The student will learn to control the parameters to be taken into account to evaluate the economic results and the corresponding corrective measures; the income statement in the room, the department budget, the preparation of statistical reports and management ratios, including the analysis of the break-even point. They will be taught how to generate daily management control reports, as well as how to manage purchases and inventories and market the beverage area. The focus will be on customer service and protocol in catering services. In addition, the use of artificial intelligence tools will be incorporated to support economic analysis and management optimization.
MODULE 3. MANAGEMENT OF HR IN THE ROOM
SUBJECT: MANAGEMENT OF HR IN THE ROOM
Type: Human resources are the main asset of hospitality companies. Their correct management, organization and control are fundamental for the achievement of the planned objectives and the obtaining of the expected results. The student will know and use the basic organization tools and templates in people management, including productivity, shift map and economic ratios. The manualization of processes and the generation of host collaborators will also be addressed. Techniques will be provided to resolve conflicts in the department, as well as to negotiate effectively with suppliers, collaborators and clients. Self-motivation, achievement orientation and time management will be explored. Likewise, the use of artificial intelligence will be incorporated to optimize shift planning, performance analysis and labor climate management.
FINAL EXPERT WORK
SUBJECT: FINAL EXPERT WORK
Type: Operations manuals and check lists of the room departments will be prepared, in which the knowledge acquired during the course will be reflected.
ACADEMIC INFORMATION
Admission requirements
To access this program you must meet one of the following access requirements:
A: Have a university degree.
B: Accredit professional experience in the Horeca sector
In the event that the student does not have a university degree, a prior interview will be held with the expert’s management for admission to the program.
How do we do it?
This program is designed and adapted to be fully compatible with the personal and professional activity of the students, thanks to a teaching structure adjusted in time and form to the requirements of the professionals in the Hospitality sector.
It consists of 200 teaching hours, spread over 4 months of training, starting in November and ending in February.
The face-to-face and/or live online classes take place on Tuesdays (non-holidays) from 10:00 to 14:00 hours and from 16:00 to 19:00 hours at the IMEP headquarters in the center of Alicante.
The virtual campus will be the digital meeting point where the different contents of the course are collected; access to the virtual classroom, recording of face-to-face classes, presentations, notes, videos, video tutorials, management tools, content forums and complementary material.
The evaluation will be carried out taking into account the following criteria:
● Attendance to face-to-face classes (50%)
● Grade obtained in the questionnaire of the virtual modules (20%)
● Final grade of the Expert Final Project (30%)
The payment of the reservation of place will only be returned in the event that the student proves not to meet the university access requirements and/or does not pass the access interview conducted by GASTROUNI/IMEP.
